Process the ginger, garlic, 1/4 teaspoon salt, lemon juice, and 2 tablespoons of water in a blender until smooth.
-
Toss the mixture with the chicken in a
large non-metallic bowl. Make sure to rub it into the chicken well.
Cover the bowl with plastic wrap and set in the fridge for at least 30
minutes, and up to 24 hours.
-
Add the tomato, cilantro, chilies,
tomato paste, the rest of the salt, and 2 tablespoons to the blender,
and puree until smooth.
-
Pour the oil into a large non-stick
pot over high heat. Add the chicken and the marinade to the pot. Cook
for about 10 minutes, stirring occasionally, until the chicken is
lightly browned. Pour in the tomato mixture. Cook for 8 to 10 minutes,
stirring occasionally until the fat separates from the sauce. Add the
yogurt. Stir well and cook for 5 minutes.
-
Turn the heat to low, cover the pot, and cook for 5 to 10 minutes, until the chicken is tender.
